Massimo’s Stracciatella is a creamy, indulgent Italian cheese that is characterized by its soft, stringy texture and delicate flavor. The name “stracciatella” comes from the Italian word “stracciato,” which means “torn apart” or “ragged,” describing the cheese’s unique texture. Handcrafted by mixing freshly torn curds (the soft, stringy parts) with cream.

How to Use:
Stracciatella is the indulgent centre of Burrata, where its creamy texture contrasts beautifully with the firmer outer layer of mozzarella. Stracciatella can be used as a finishing or filling for sandwiches, pizzas, and pasta. It can be drizzled with olive oil and served with fresh bread, tomatoes, and basil, creating a simple yet exquisite appetiser.
